Batching, briefly
Batching just means pre-mixing everything but the dilution — the water a shake or stir would normally add — so you can pour, chill, and serve without remixing each drink to order. Build the batch at full strength, add the dilution water right before service (or right before it goes in the fridge), and taste before you commit a whole gallon of it. Spirit-forward stirred drinks (Manhattans, Old Fashioneds) usually sit around 18% dilution; citrus-forward shaken drinks (Daiquiris, Margaritas) usually want closer to 25%, since shaking adds more water than stirring. Batches keep best refrigerated, and most citrus-based batches are happiest used within 3–5 days.
